Eggplant spread

1 blue eggplant
1 clove of garlic
4 tablespoons Vedrini sunflower seeds  
juice of half lemon
Himalayan salt

Cut the eggplant to a couple of larger pieces and wrap them in foil and bake for about 30 minutes at 200°C. In a medium hot pan fry sunflower seeds. When cool, grind them in a grinder. Peel the eggplant, put it into the food processor and add the seeds. Mix everything together.
