Canolli Siciliani

1 packet dough for pies
250 g ricotta cheese
100 g castor sugar
1 packet vanilla sugar
60 g Vedrini chopped pistachios
Frying oil (about 1 l)
some castor sugar

 

 

Fry canolli in deep oil at medium heat until pink. Put them on the paper and carefully remove them from the mold. Mix the ricotta, vanilla sugar and castor sugar to get the cream. Fill the prepared chilled canolli with cream. Sprinkle the ends of canolli with pistachio. Sprinkle canolli with casotor sugar before serving.
