Cashew Vegan cheese

200 g raw Vedrini cashew
120 ml filtered water
4 tablespoons  soya yogurt
1/2 cups Himalaya salt
spices (garlic, basil)

Dip cashew in water and soya yogurt. Press the cheese through the strainer and leave it in the deep bowl to stand overnight – fermenting. Add salt and spices  and cool in the fridge before using.
