A ginger cocktail

1/2 kg fresh ginger
1 kg sugar
14 lemons
3 l water
200 g Vedrini ginger
500 ml champagne
some mint leaf

Chop ginger. Put 1 kilogram of sugar into 3 liters of water, add the ginger and boil for 10 minutes, then cool. Mix the syrup with 200 ml of champagne. Transfer into glasses. Decorate with lime, mint leaf and add three pieces of Vedrini ginger in each. Add some ice.
